Jock Lindsey's Hangar Bar Halloween Candelabra Eggs served in glass cups on a brass candelabra

Halloween at Jock Lindsey’s Hangar Bar has become one of the most talked-about spooky season traditions at Disney Springs, and now we finally know who dreams up those wild presentations. Meet Chef Gary Miles, the puzzle-loving culinary mind behind the Candelabra Eggs, Bone Kebabs and the rest of this year’s eerie lineup at the lakeside lounge.

Who Is the Chef Behind Jock Lindsey’s Hangar Bar Halloween?

Chef Gary has spent 28 years at Walt Disney World. He started through the Disney Culinary Academy apprenticeship program and worked his way through kitchens across the parks, picking up the Walt Disney Legacy Award along the way. These days he cooks for the Disney-owned restaurants at Disney Springs, and he has been there since the district first opened.

His story didn’t start in a fancy kitchen. At 15, Gary was lounging at home in Ohio watching the TGIF lineup when his mom called from the Mexican restaurant where she worked and asked if he wanted a dishwashing shift. He went back the next day, and the next. What hooked him was watching the line cooks laugh and joke while they worked, and within a few months he was cooking right next to them on the hotline. He says that same team spirit is what he tries to build in his Disney kitchens today.

Solving the Halloween Menu Puzzle

Gary calls himself “a puzzle person,” and the Hangar Bar handed him a tricky one. He helped build the very first holiday menu at Jock’s back in 2019, but when the team added a Halloween overlay last year there was a problem: beyond candy, Halloween doesn’t really have a signature dish. His answer was to keep the flavors familiar and on trend, then make the presentation the star. Since the Hangar Bar isn’t tied to one cuisine, the team can borrow from anywhere in the world (fitting for a bar run by a globe-trotting pilot).

His favorite dish this year is the Candelabra Eggs, and getting them onto that candelabra took some trial and error. The team needed food-safe cups that would hold a deviled egg just right. Cupcake liners and bamboo cones both missed the mark. The winner turned up in a storage room: tiny two-piece martini cups that fit perfectly. Gary compared it to snapping in the last piece of a puzzle.

A Spooky Spin on Jock’s Hangar

Fans of Raiders of the Lost Ark will remember Jock Lindsey as the pilot waiting with his seaplane to fly Indiana Jones away from danger, and his pet snake Reggie, who did Indy no favors. The bar’s backstory says Jock settled down at Disney Springs and turned his hangar on the lake at The Landing into a lounge full of souvenirs from his adventures. For Halloween, it gets a cozy 1940s makeover with vintage lanterns, pumpkin scarecrows by the entrance (look for the one dressed like a pilot) and jack-o’-lanterns floating over the diving bell seating.
