Jack-Jacks Num Num Cookies Recipe: Makes 9 Giant Cookies
Here’s what you’ll need:
- 1 cup cold butter, cubed
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 ¾ cups all-purpose flour
- 3 tablespoons cornstarch
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup mini semisweet chocolate chips
- 1 cup semisweet chocolate chunks, divided
- Cocoa powder (for dusting)
Steps to Cookie Bliss:
- Preheat your oven to 350°F and grab nine 4-inch shallow paper baking cups. Place them on a large baking sheet and set aside.
- Cream the butter and sugars together in a mixer for about 3 minutes until fluffy. Then, add the eggs and vanilla and mix until fully blended.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Slowly add this mixture to the wet ingredients, mixing on low speed until just combined. Don’t overmix!
- Stir in the mini chocolate chips and ½ cup of the chocolate chunks until evenly distributed. Again, avoid overmixing—Jack-Jack likes his cookies tender, not tough. 😉
- Scoop about ½ cup of dough into each baking cup, pressing it gently into the bottom. Sprinkle the remaining chocolate chunks evenly across the tops of the cookies, pressing them in slightly.
- Bake for 20-22 minutes, or until the cookies are golden brown. Let them cool for 5 minutes in the baking cups before transferring them to a wire rack.
- For an extra magical touch, place a Jack-Jack stencil over each cookie, dust with cocoa powder, and remove the stencil. Voilà—Num Num perfection!
